Farm Fresh Peach Cobbler

Nothing says summer like a ripe, juicy peach. Does it get any better than fresh fruit, straight from the farmer’s market? Not really. Unless, of course, you use that fresh fruit to make a delicious, homemade cobbler.

This tasty recipe can be enjoyed year round–in a bowl, on a plate or on top of ice cream! However and whenever you eat this cobbler, you’ll be experiencing a summertime essential.

4 peaches *
1/4 cup syrup*
1/4 cup honey*
2 cups whole wheat flour
1 cup oatmeal
1 cup pancake mix
1/2 cup butter
2 T. stevia
2 t. cinnamon
2 t. nutmeg
2 t. cardamom

Preheat over to 375 degrees. Prep the crumble by mixing all ingredients (except the peaches) into a bowl. Use a fork or butter cutter to create a crumb-like consistency. Mix well.

Rinse and slice the peaches. Place them in a 15×10 baking dish. Top evenly with the crumble mixture. Bake for 20-25 minutes. Enjoy!
