Looking for a plant-based alternative to tacos? One of my favorite substitutes, that’s also high in protein and rich in vitamins, is quinoa! Additional health benefits of quinoa include fiber, antioxidants and amino acids. Quinoa is extremely versatile and relatively easy to prepare. Here’s one of my favorite ways to enjoy it!
1 Keen One Harissa Red Pepper Quinoa Cup
1 package of refrigerated croissant dough
1/2 cup hummus
1/2 cup shredded cheddar cheese
Preheat oven to 350 degrees. Spray baking sheet with olive oil. Prepare Keen One Harissa Red Pepper Quinoa Cup as instructed. Roll out croissant dough. Spread hummus on each croissant. Scoop approximately 2 T. of quinoa onto each croissant. Top with cheese. Fold croissants and seal by pressing edges with a fork. Bake for approximately 10-13 minutes. View the tutorial here.
