Frosted Pumpkin Banana Muffins

Regardless of the time of year, pumpkin is a source of many nutrients and joyful memories of hoodie weather, bonfires and baking in the kitchen. If you’re anything like me, the cooler temps and pumpkin-inspired treats create warm moments that fill your heart and your hunger for something sweet.

Not only do pumpkins taste amazing, but they’re high in fiber, which keeps you full and can also reduce cholesterol by clearing your arteries.The carotenoids in pumpkin can also reduce the risk of cancer cell formation while keeping your skin healthy as well.

Ingredients

Muffins:
15 oz. can of pumpkin puree
1 egg
2 T. honey
1/4 c. maple syrup
1 t. vanilla extract
1/4 c. stevia
2 1/2 c. whole wheat flour
2 bags of Crispy Green Banana Slices
2 t. baking soda
2 t. cinnamon
2 t. cardomon
2 t. nutmeg

Frosting:
1/2 c. powdered peanut butter
2 t. stevia
mix with water

Instructions

Preheat oven to 375 degrees. Add the wet ingredients to bowl and mix well. Stir in dry ingredients. Fold in Crispy Green Banana Slices. Line muffin pan with paper liners. Fill 3/4 with batter. Bake for approximately 15 minutes. Allow to cool before frosting.
