
If you’re anything like me, you occasionally buy more bananas than you can eat. Once they’ve pasted their prime, I typically enjoy freezing bananas and using them to add thickness and flavor to my protein shakes. This time, however, I decided to experiment by creating a protein banana bread. The result? An amazingly healthy, delicious and easy-to-make comfort food! It’s the perfect treat to keep you accountable to your fitness goals.
Ingredients
3 eggs
6 ripe bananas
1/2 cup applesauce
4 packets of SweetLeaf Stevia (or 2 T honey)
2 cups whole wheat flour or almond flour
2 scoops vanilla protein
1 teaspoon baking powder
1/2 teaspoon sea salt
Instructions
Preheat oven to 350 degrees. Combine all ingredients and pour into a baking dish (I coated mine with coconut oil). Bake for approximately 30-40 minutes. Enjoy! Bananas are a great source of potassium which stimulates your muscles, nerves and brain cells, and can help reduce blood pressure and the risk of stroke.
